Grouper is known for its stout body, large mouth, and distinctive spotted color. While size can vary greatly, it is not uncommon for Grouper to attain lengths of over 3 feet and weigh over 200 pounds. This fish has a mild but very unique flavor, reminiscent of a cross between bass and halibut. Its firm white flesh boasts large flakes with a high oil and moisture content. This makes Grouper an extremely versatile fish that can be used for a broad range of recipes and cooking methods, such as grilling, frying, baking, broiling, and poaching. It is also excellent in soups or chowders.
We primarily source fish from Fishery Improvement Projects (FIPs) that are developed under the Conservation Alliance’s Guidelines for Supporting Fishery Improvement Projects. We engage in FIPs to improve catch data, reduce by-catch and encourage effective fishery management. Your business supports these efforts.
